To be able to snack responsibly, I need to have healthy alternatives at hand to tame my sweet cravings. When I found this recipe online, I had to try it right away.
This recipe for yummy apple oatmeal cookies is easy to follow and you might even have all of the ingredients (or a substitute) at hand already. It took me about half an hour to prepare the cookies and clean up my mess, and the cookies need to bake for about 30 minutes.
Ingredients for +- 12 cookies:
- 200 gr oatmeal
- 2 apples
- 1 handful of raisins (50gr)
- 1 handful of nuts (50gr)
- 50 gr coconut oil
- 1 spoon of honey
- 1 teaspoon cinnamon
- a sprinkle of salt
The original recipe is made with walnuts, but I used pecan nuts because I had them at hand and I didn’t feel like going to the store. I grated the apples and minced the nuts. I used coconut oil but you can also use butter of course.
Just whip everything together and then shape it up so they’re beginning to look like cookies….
… and put them in the oven at 170°C for 30 minutes. You can store the cookies for a few days if you didn’t eat all of them right away. But I do yet have to find a way to store them without loosing their crispy structure. Mine got all flexible after a night in the cookie jar.
